That time I cut all my hair off.

Well, it seems to me that nothing if fully O-fficial without me screaming it from the roof tops of the blogging world. So here we go, "I cut all my hair off." Okay, fine, I'm being dramatic. I didn't cut all of it off, but 9 inches is a lot, especially when you feel like you were born a hippie child. So here, I will bless you with the awkward mirror pic that was taken right after. More to come after my weekend in Tallahassee with my sweet hunny and co. 





























OH, and 50% off the entire store?! Great, we'll stalk up on wine like the world is ending.



And Tucker got a new ID tag. I love the furry little fella.

Here's to being awkward.



Well I was in sheer panic yesterday thinking Tucker had a tick, I called 3 vets to try and bring him in before they closed, made my mom stop what she was doing to meet me with him, freaking out thinking I wouldn't make it in time, obnoxious amount of tension in the waiting room to hear the vet come in and say, "Yeah, so it's not a tick mam, that would be a nipple."

Uhh that was awkward.

It's been a while...

It's been a while since I've done a food post, and lucky for you I've risen from my death bed and my mom and I made the most fab-u-lous chicken tonight. Here's a little glimpse into Cafe de Bartelt. 

Drum roll please... 
Okay, thank you!

Chicken stuffed with goat cheese and sun dried tomatoes 

and

A side of sauteed spinach 


Chicken:
1. Cut your chicken breasts in half, and softly pound with a meat mallet 
2. Lightly season chicken breasts with salt and pepper
3. In a bowl mix goat cheese, a few pieces of sun dried tomatoes, one basil leaf and a pinch of salt and pepper
4. Spoon a small amount of cheese mixture on a piece of chicken, and roll that bad boy up like a nice little burrito, if you will. Hold it together with a tooth pic.
5. In a pan add a small amount of canola oil, lightly brown the chicken.
6. Put the chicken in the oven (at 400 degrees) for about 8-10 minutes. 
7. You're done- easy, peasy, baby!

Spinach:
1. Chop up three cloves of garlic.
2. Heat up a pan on the stove, add olive oil and brown the garlic. 
3. Add the spinach- A LOT of spinach because this is one sneaky vegetable, it shrinks to nothing.
4. Saute for a few minutes until soft and dark green. Salt and pepper to taste.

This meal is e-a-s-y, and my goodness is it tasty.

Overdosing on Vitamin C

I don't think words could describe how excited I was for this weekend.

And then the whole world got sick. Okay so not the whole world, but my mom, Hunter and now I'm feeling like I got hit by an 18 wheeler (and then they threw that bad boy in reverse and hit me again). So with that being said, this weekend was full of a lot of R&R, and lobster mac & cheese. NOM.

My birthday is Thursday, 23, where in the world did you come from?? Seems like just yesterday I was choreographing some sick moves to Spice Girls and begging for more butterfly hair clips. On second thought, I'm glad those days are over- those butterfly clips were God awful.

We had a family birthday celebration last night since Hunter's not here during the week and it's so hard to get everyone together. Moral of the story, I'm one lucky gal.

Lobster Mac & Cheese. If you haven't had it. Do it. Seriously. 
Peanut Butter Ice Cream Cake. Drool.

Confession

Alright here we go... 

I was in the car for a told of an hour and five minutes today (a whopping total of 65 minutes for all my math geeks out there). Within that 65 minutes, I shamelessly, and yes I repeat shamelessly listened to Phillip Phillips's song gone, gone, gone on repeat. Loudly. I'm talkin' booty bumpin' loud. Sorry that was awkward.

The real confession: that was the highlight of my day (Obviously because I hadn't had the chance to watch some HGTV, don't fret I'm getting my fix as we speak).


BIG NEWS: Tucker got his first bow tie. Handsome, isn't he?? Thanks Christa ;)

Hangin' with my homeboys

FACT: 75% of my friends are dudes. (GASP!) A girl that hangs out with guys? Yes, and guess what they are the most fan-freaking-tastic people in the history of ever.

Last weekend Hunt was in town so clearly I was in store for a guys weekend (don't worry, I'm used to it, and love it). Friday we drove out to Dunedin and went to two local breweries and did some beer tasting and tours. It was a great way to spend the day, would have been better if I would have remembered my ID and didn't have to try and bribe the bartender to let me drink without it (I've really been lacking the common sense lately. Hey, don't judge).

Saturday we drove out to the horse track to do some good ol' gambling with all my favorite boys. I bet 3$ one time, lost, and as a result spend the rest of my time drinking beer out of the cooler you're allowed to bring in with you (how freakin' neat, right? right).

Moral of the story is: Guy friends are the best friends. (I love my girls too, but how many do you know want to go beer tasting and to the horse track? Yup. Zip. Zero. Nada).
